Vineyard/AVA Description
This Cabernet comes from our Soaring Eagle vineyard on the Wahluke Slope AVA. Soaring Eagle is one of our hotter sites with ideal growing conditions, that produces wine with concentrated flavors.
Winemaking
Fruit was picked October 10-24 and fermented in stainless steel tanks. Fruit was cold soaked for 3-5 days before fermentation. Cap management was strategic during fermentation utilizing pump overs and delestage. Once pressed and fermentation was complete, wine was aged on oak with micro-oxygenation for 9 months.
Tasting Notes
Rich and inviting, this Cabernet Sauvignon opens with aromas of red berries, vanilla, and sun-warmed plum. The palate is lush and layered, revealing flavors of juicy dark cherry and candied tamarind. Silky tannins and subtle black licorice notes provide structure and depth, leading to a long, polished finish.
