Winemaking: Mourvèdre in this blend was harvested early October at 26 Brix. Cap management was almost exclusively pulsair, to keep extraction of harsh tannins at a minimum. Once wine had completed fermentation, it was micro-oxygenated without oak.
Syrah in this blend was harvested at the end of September and fermented in concreate vessel. Once wine completed fermentation, it was aged in French oak barrels for 18 months.
